Ingredients
3 cooking apples (or mix apples with pears)
250 g plain flour
2 tsp baking powder
1 tsp cinnamon
150 g caster sugar
150 g butter, melted, plus extra for greasing
3 eggs, beaten
For the glaze:
25 g butter
3 tbsp caster sugar
1 tsp ground cinnamon
Method
Line and grease a 9" / 23cm round cake tin. pre-heat the oven to 180C.
Peel the apples and pear, then cut two into 1cm dice and one into thin slices about 5mm thick to decorate the cake.
Sift the flour, baking powder and cinnamon into a large bowl, then add the sugar and mix together.
Add the two diced apples, then the melted butter and the eggs. Tip the batter into the prepared tin, then lay the apple slices on top so that they fan out around the edge of the cake.
Bake for about 50 minutes.
For the glaze:
Melt the butter in a pan over a medium heat, then add the sugar, stirring until it dissolves.
Stir in the cinnamon, then remove from the heat and set aside.
When the cake has cooled. reheat the glaze, then pour over the cake and allow to cool completely while soaking up the spicy syrup.
