Bubble and squeak
Ingredients
- 2 potatoes, peeled and diced
- ½ green cabbage/leeks/kale, shredded
- 2 tbs butter
- salt and freshly ground black pepper, to taste
Method
Place the diced potatoes into a large saucepan, with plenty of boiling water, and place on a high heat, to boil, for 8-10 minutes. Add the shredded cabbage to the water, and continue cooking for two minutes.
Drain the mixture well and then mash the potatoes and cabbage mixture, season to taste. Heat the butter in a small frying pan and add the mashed potatoes and cabbage to the pan. Pan-fry for 3-4 minutes. Carefully turn the mixture over, and continue cooking for 4-6 minutes, or until golden brown, with a light crispy outside. Turn onto a serving plate.
